Super satisfying 4-ingredient salad with lemon vinaigrette that's perfect for work-from-home lunches
Romaine, radicchio, chickpeas (from a can), and A LOT of Parmesan cheese.
Romaine lettuce, cut into thin strips (crunch)
Radicchio, cut into thin strips (bitterness)
Canned chickpeas, drained and rinsed (protein & fiber)
Parmesan cheese, grated with the larger holes in your box grater or into thin sheets (fat, salt & umami)
Mix it all together with lemon vinaigrette (recipe below) in a large bowl. Top with extra Parmesan cheese and freshly ground black pepper.
Lemon Vinaigrette (acidic, sour & bright)
1/2 cup extra virgin olive oil
1/4 cup lemon juice (about 1 lemon)
1 garlic clove, finely grated on microplane, or minced into a paste
1 teaspoon coarse ground Dijon mustard
1/4 teaspoon kosher salt
Freshly ground black pepper, to taste
Mix everything together until emulsified. I like to do this by shaking it in a mason jar so I don’t need to bother with a whisk.
