Weeknight crunchwrap
I tried to make it circular like Taco Bell and failed (it fell apart in the pan, lol) so it's now a burrito shape and I think that's good because it's more convenient to make it this way!
1 large flour tortilla
1/4 cup refried beans
Small handful of tortilla chips, slightly crushed
1/4 cup cheddar cheese, shredded
1/4 cup tomatoes, diced
1/4 cup iceberg lettuce, chopped
2-3 slices of avocado
A few pickled jalapenos, diced
Cooking oil/spray
Sour cream and salsa, for serving
Spread refried beans in the center of the tortilla. Top with tortilla chips, cheese, tomatoes, lettuce, and avocado.
Fold into burrito shape.
Heat a pan over medium heat and add a thin layer of oil. Place crunchwrap on the pan (side with the fold down first). Flip after ~1-2 minutes, after first side has turned golden brown. When both sides are crispy, remove from pan and slice in half.
Serve with sour cream and salsa.
