Just enjoyed a big bowl of CP the other afternoon - elbows with olive oil, lots of Parm, salt & pepper, and some pitted kalamata olives (plus a little brine). I have celiac so use Jovial GF - I find it the closest on the market to conventional semolina pasta. YMMV. I've spent a lot of time rethinking standards when it comes to food . . . and am finally at the place where I just eat what makes me feel good. Pasta anywhere makes me feel good.

I'm definitely calling it CP from now on, lol. Your version sounds delicious - I love kalamata olives but have never put them in pasta...need to try that ASAP!

Also tastes good to add the olives to marinara for a more acidic CP experience... if I’m wanting greens, I’ll fold some baby spinach in there & let the hot sauce *just* wilt it down a bit (slimy spinach is NOT MY JAM). I might make some pasta right now, in fact! 😂

So yummy! I had it at work a few months ago for the first time and couldn't believe I had never used it that way either. I've always loved it so much in salads but never thought to cook it.
